Description

Design Theory was engaged to breathe new life into a circa 1905 heritage building on George Street in East Fremantle, continuing its century-long tradition as a grocer and wine merchant. Originally opened as The Wine Store in 2012 and now known as Young George, the venue was envisioned as a traditional neighbourhood wine bar, celebrating the existing architecture while reactivating it as a gathering place for the local community. Design Theory led every aspect of the refurbishment, from spatial planning, furniture and art to the exterior paint scheme and finer details such as uniforms and serveware.

Located within the designated George Street heritage area, recognised for its historic buildings and streetscape, we undertook extensive research into the building and wider Plympton Ward precinct, informing choices in materials, colour palette and furniture that celebrate its history while supporting contemporary use.

Original features, such as the masonry limestone and brick walls and timber floorboards, were enhanced with a monochromatic black-and-white palette, including custom-designed wallpaper. Two large communal tables, designed by furniture maker Paul Morris, nod to the building’s history, incorporating old brandy barrels and aged oak that carry the aroma of the wine once stored within them. Additional interventions include a generous bar, acoustic ceilings, window treatments to filter natural light, a basement cellar for events and a visual connection to the neighbouring bottle shop.
